CRACKING (Eggs)
This simple technique is easy to take for granted, but my experience tells me not to do so. We are talking about raw eggs in their shell, which is one of nature's marvels of packaging.
In the book I show the easy steps that allow you to break the egg cleanly and dump its contents into the bowl. I'll add here that you should use part of the shell to retrieve any shell that accidently falls into the egg.
Eggs
To break the egg, hold it firmly and strike the egg against the edge of the bowl midway down the long side of the egg.
Grab the broken half in your other hand and dump the contents of both sides into the bowl.
If a bit of shell falls into the egg, use half of the emptied shell to retrieve it. There is a natural adhesion that the shell bits will have for each other to get it out easily.
